Rice is one of the most common foods we eat in Nigeria. If you like variety as much as I do, you will be bored of eating same old thing every time. So to make it interesting, I change it up as much as possible. That was how I came up with this Rice Stew recipe.
I call it Rice Stew because I initially made it for Rice but, it can be eaten with almost anything you like be it Yam, Plantain, Spaghetti and so on. One of the advantages is that it doesn’t take a lot of time to prepare. As long as all the ingredients are available, it can be put together in no time at all. So, it is a good choice for busy mums and students and professionals alike,
Recipe
Serves 4
Preparation time: 15 mins
Cooking time: 15 mins
Total duration: 30 mins
Ingredients
Assorted Meat (beef, chicken, tripe, etc), cooked and diced into small chunks
5 Loose tomatoes, chopped
3 Red bell peppers, chopped 4 Scotch bonnet peppers ( ata rodo), chopped
1 Medium onion, chopped
Salt
Cumin and Coriander powder
Thyme
Vegetable seasoning
Palm Oil
Directions
1. Heat the palm oil in a pan and add the onion along with the red scotch bonnet peppers. Fry for about 2 mins.
2. Add the tomatoes and red peppers; stir and fry for about 1 min. Then add the assorted meat, season with salt, thyme, cumin, coriander and the vegetable seasoning. Cover and let simmer for 10 mins.
3. Serve and enjoy.
You can pair it with any food of your choice but it is best eaten with rice.

This came in at the perfect time cos rice and chicken stew now feels boring. Nice way to spice up eating white rice.
