How To Make Crispy Roast Potatoes in 40 mins

Have you ever wondered if the time it takes to make crispy roast potatoes can be shortened? Then, you have come to the right place. I will be sharing with you how the method I use to roast potatoes in just 40 minutes. This method of roasting potatoes has become one of my favourite cooking hacks.

Traditionally, roast potatoes are usually served as side dishes on seasonal occassions such as during Christmas and Thanksgiving. They are also served during Sunday Roast dinners (a British tradition). I believe the best roast potatoes are those with a perfect blend of crispiness on the outside and softness on the inside.

To roast potatoes that are crispy on the outside and soft on the inside, you would need about an hour. This is okay whenever I am making a full roast dinner with the works ( that is roast chicken, veggies, potatoes and sauce). But, more often than not, I would like to have roast potatoes on its own and I find that waiting an hour for it to be ready discourages from cooking it at times.

As a workaround, I came up with a new way of roasting potatoes. Instead of popping the potatoes in the oven raw, I would boil them for some minutes first and then pop into the oven for half the original time required. The result is no different from roasting them from scratch and in half the time at that. Roasting potatoes this way has saved me a lot of time in the kitchen. It also means that I can now enjoy roast potaoes whenever I want without having to worry about the long time it takes to cook.

What you need to make the roast potatoes

  1. Potatoes, I used about 7 small to medium-sized potatoes which were enough for 1 to 2 portions.
  2. Salt to add to the boiling water.
  3. Herbs to season the potatoes.

How to make the roast potatoes

  1. Add water and salt to a pan and boil on the hob.
  2. Wash the potatoes, peel and cut into small chunks (not too small to prevent overcooking). Wash the potato chunks in cold water.
  3. Add to the pan of salted boiling water and boil for not more than 10 mins.
  4. Preheat the oven to 180°C and line an ovenproof dish with foil or parchment paper.
  5. After boiling, scoop the potatoes into the oven dish, sprinkle with some mixed herbs and put in the oven.
  6. Bake for 30 mins. You can increase or reduce the baking time depending on how golden you like your potatoes. I love mine very golden and crispy which is why I bake for 30 mins.
  7. When ready, remove from the oven and serve while hot.

These roast potatoes can be enjoyed in different ways. Examples are shown below:
