Pepper Stir Fry with a twist – Aromatic, Simple & Easy

Hello friends, I am excited to share with you my first recipe post as Flavours and Aroma. This Pepper Stir Fry recipe is a simple main course recipe that is both flavourful and aromatic (excuse the pun). It is so simple and straightforward that anyone can cook it regardless of their expertise in the kitchen.

Our first stop on this food adventure is China, the birthplace of stir fry dishes. Stir-fries involve frying the ingredients in a small amount of very hot oil while stirring (hence the name). Because the ingredients cook rapidly, they retain a lot of their fresh look and become crispy on the outside. This rapid cooking also helps lock in flavours. Traditionally the ingredients consist of vegetables along with a form of protein be it meat, poultry or fish

I love making stir-fries mainly because they are quick, simple and can be paired with any food. I have had stir-fries with pasta, rice, wraps and egg noodles.

Stir fry vegetable packs would include vegetables such as carrot, cabbage and beansprout. This pepper stir fry recipe stemmed from my desire not to have the traditional vegetables just some peppers and courgette. The main source of protein in the recipe is the chicken breast. I love adding mushrooms to my stir fry recipes as they are a good source of fibre, protein and antioxidants. How to enjoy this pepper stir fry dish

The Pepper Stir Fry can be paired with different foods. For this post, I have paired it with couscous and wrap.

Pepper Stir Fry with a twist – Aromatic, Simple & Easy

Description

This pepper stir fry recipe is simple to make and packed full of flavours. It can also be paired with any dish of choice.

Ingredients

  • Ground Spices ( Grind all herbs and spices together using a spice grinder or any other equivalent)

  • For Marinating Chicken

Instructions

  1. Season chicken breast with paprika, cumin powder, chillin powder, knorr aromat seasoning and dark soy sauce. Leave to marinate in the fridge for a minimum of 4 hours (overnight is best).
  2. Add olive oil to a non-stick pan or wok on medium heat.
  3. Add marinated chicken breast chunks and stir fry for 5 minutes.
  4. Add the spring onions and crushed garlic. Stir fry for 1 minute.
  5. Add the ground spices and stir fry for another 1 minute.
  6. Add mushrooms, courgette slices and mixed peppers. Stir fry for 3 minutes.
  7. Add the chilli powder, Maggi cube and knorr aromat seasoning
  8. Add salt to taste.
  9. Stir and leave to simmer for 5 to 10 minutes or until chicken is cooked through.

Notes

  • Make sure the oil is very hot before adding ingredients but cook on medium heat to avoid overcooking.
  • For a vegetarian option, replace the chicken breast with more vegetables or meat-free protein substitutes such as Quorn pieces and tofu.
  • In case you are unable to make the ground spices, it can be substituted with a combination of mixed spices (2 teaspoons), cumin powder (1 teaspoon), ground coriander (1 teaspoon) and mixed herbs (1 teaspoon).
