It is not secret that chicken is the one of the widely eaten protein around the world and trust me I have tried my hand at different versions such as barbecue and roasted among others.
I only just discovered pepper chicken and I am absolutely in love with it. 90% of the time, it will be my order whenever I am at a restaurant. Being a foodie, it is no surprise that I eventually attempted to make my own version of it and this is what I came up with. I implore you to give a try and I hope you fall in love with like I did. Unlike my previous posts, it takes a bit more time but you can trust that the result is worth it.
The Recipe
Serves 6
Preparation time: 15 minutes
Cooking time: 1 hr 15 minutes
Total duration: 1 hr 30 minutes
Ingredients
6 chicken portions
5 Loose tomatoes, chopped
4 Scotch bonnet peppers (rodo), chopped
2 onions, 1 chopped and 1 sliced
2 Knorr cubes
Curry
Thyme
25g Tomato Paste
Salt
Directions
- Wash the chicken. Then, season with salt, 1 knorr cube, sliced onions, curry, thyme and boil for about 30 mins ( can be more or less depending on the texture of your chicken). After boiling, put on an oven rack and grill for another 30 mins, turning it half way( you can fry it if that is preferable. I grill because it is healthier).
- Get a pan and oil it. When hot enough, add the scotch bonnet peppers and onion. Fry for about 2 mins, then add the chopped tomatoes and tomato paste. Season with salt, curry, thyme and knorr cube. Leave to fry for about 10 mins.
- Add the chicken, stir together to ensure the sauce covers all the chicken portions and leave to steam for about 3 to 5 mins.
- Serve with any accompaniment of your choice (goes well with rice and fries).
